We are always looking for new recipes. Once in a while we make some that are more demanding, but in general we prefer quick, easy and, of course, tasty recipes! This recipe I'm bringing today, a Chinese-Style Chicken with Pineapple, falls right into this category!

Chinese-Style Chicken with Pineapple

Ingredients
- For the sauce:
- 3 tbsp pineapple juice
- 2 tbsp soy sauce
- 1/3 boullion chicken cube (you can substitute for 1 tsp chicken broth concentrate)
- 2 tbsp water
- 2 tbsp Hoisin sauce
- 3 tbsp brown sugar
- 2 garlic cloves, minced
- 2 tsp corn starch
- For the chicken:
- 1 tbsp vegetable oil
- 1lb (450g) chicken breast, diced
- 1 cup pineapple, diced
- 1/4 cup cashew nuts, chopped (optional)
Instructions
- For the sauce:
- In a saucepan mix all ingredients and let it simmer for around 10 minutes.
- For the chicken:
- In a skillet heat the oil and fry the chicken until golden brown. Add the pineapple and cook for around 2 minutes. Pour the sauce, cashew nuts (if using) and mix well.
- Serve with rice
You could also serve it with Broccoli Rice or Cauliflower Rice!
