We are always looking for new recipes. Once in a while we make some that are more demanding, but in general we prefer quick, easy and, of course, tasty recipes! This recipe I'm bringing today, a Chinese-Style Chicken with Pineapple, falls right into this category!

Chinese-Style Chicken with Pineapple

Prep time: 10 mins
Cook time: 15 mins
Total time: 25 mins
Serves: 3
Ingredients
  • For the sauce:
  • 3 tbsp pineapple juice
  • 2 tbsp soy sauce
  • 1/3 boullion chicken cube (you can substitute for 1 tsp chicken broth concentrate)
  • 2 tbsp water
  • 2 tbsp Hoisin sauce
  • 3 tbsp brown sugar
  • 2 garlic cloves, minced
  • 2 tsp corn starch
  • For the chicken:
  • 1 tbsp vegetable oil
  • 1lb (450g) chicken breast, diced
  • 1 cup pineapple, diced
  • 1/4 cup cashew nuts, chopped (optional)
Instructions
  1. For the sauce:
  2. In a saucepan mix all ingredients and let it simmer for around 10 minutes.
  3. For the chicken:
  4. In a skillet heat the oil and fry the chicken until golden brown. Add the pineapple and cook for around 2 minutes. Pour the sauce, cashew nuts (if using) and mix well.
  5. Serve with rice

You could also serve it with Broccoli Rice or Cauliflower Rice!
