Apple Coffee Cake

This Apple Coffee Cake is made with yogurt and it's great for breakfast or an afternoon snack. You'll love it!

One of these days we had too many apples and too much yogurt at home. Our solution was to look for a coffee cake recipe that included both. After some researching we found some we liked. We've been making our version for quite some time and the recipe I'm sharing with you today is the one we've been making nowadays. And it's great!

Ingredients

To make this apple crumb cake you'll need:

First for the cake...

  • all-purpose flour (you can substitute for whole wheat flour or use half of each)
  • baking powder
  • butter
  • brown sugar
  • egg
  • plain yogurt
  • apple

And for the crumb...

  • butter
  • all-purpose flour
  • brown sugar
  • rolled oats
  • ground cinnamon (optional)

How to make

  • Grease a 8 1/2in x 4 1/2in (21cm x 11cm) loaf pan. You could also use waxed paper.
  • Preheat the oven to 350F (180C).
  • Prepare topping first: mix melted butter, brown sugar, oats, flour and cinnamon (if using) in a small bowl and set aside.
  • Cake: mix butter and sugar together until smooth, add egg and continue to mix. Add yogurt and mix well. Add flour, baking powder and mix well.
  • Stir in apples gently and avoid over mixing.
  • Pour mixture into prepared pan, sprinkle crumb on the top and bake for 25 mnuites minutes or until tooth pick inserted in the center comes out clean.

Tips to make this delicious Apple Coffee Cake Recipe

  • You can make your own yogurt, here is the recipe
  • This cake is not very sweet so you can add a little more sugar if you prefer a sweeter cake
  • I wanted to make a crumb that isn't so fat so I used less butter than I would usually use. For this reason the crumb doens't stick so much on the cake (but it's delicious). Feel free to add a little more butter to the crumb

  • 1 small apple peeled, cored and diced

Topping/Crumb

  • 1 tbsp butter melted
  • 1 tbsp all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 tsp ground cinnamon optional

Instructions
