helpful tips to make this Mexican fried rice recipe
- The recipe calls for red and yellow bell pepper, but don't worry if you don't have both, you can use 2 of the same color.
- If you want to make your own sour cream, check our recipe right here!
- You could easily substitute the rice for broccoli rice or cauliflower rice!
- This is a mild recipe, so you can add more spices if you want.

Mexican Fried Rice
A delicious and easy to make Mexican Fried Rice (great way to use leftover cooked rice)
Servings 3 large servings
Ingredients
- 2 tbsp olive oil
- 1 small red onion diced
- 2 cloves garlic minced
- 1/2 chicken breast cut into cubes
- 1 tsp cumin powder
- 1/2 tsp coriander powder
- 1/4 tsp paprika
- 1/4 tsp sweet paprika
- 1 small red bell pepper diced
- 1 small yellow bell pepper diced
- 1 stalk celery chopped
- 2 small tomatoes diced
- 2 cups cooked rice
- Salt and pepper to taste
- *for serving: fresh cilantro, sour cream and avocado
Instructions
- Heat a large skillet over high heat. Add 1 tbsp oil, onion and garlic and cook for about 2 minutes. Add chicken and spices and cook until it starts to brown (around 7 minutes) and then set aside.
- Return skillet to the heat, add remaining 1 tbsp oil, peppers, celery and tomato. Stir and cook until peppers are tender (about 3 minutes) - reserve.
- Add the rice to the skillet, return to the heat and let it fry a little (2 minutes). Add reserved ingredients to skillet and mix well. Adjust salt and pepper to your taste.
- Serve immediately, garnished with fresh cilantro, some avocado slices and a dollop of sour cream
