A delicious and easy to make Mexican Fried Rice (great way to use leftover cooked rice)

Ingredients
2tbsp olive oil
1small red oniondiced
2clovesgarlic minced
1/2 chicken breastcut into cubes
1 tsp cumin powder
1/2tsp coriander powder
1/4tsp paprika
1/4 tsp sweet paprika
1 small red bell pepperdiced
1small yellow bell pepperdiced
1stalk celerychopped
2 small tomatoesdiced
2 cupscooked rice
Salt and pepperto taste
*for serving: fresh cilantro, sour cream and avocado
Instructions
Heat a large skillet over high heat. Add 1 tbsp oil, onion and garlic and cook for about 2 minutes. Add chicken and spices and cook until it starts to brown (around 7 minutes) and then set aside.
Return skillet to the heat, add remaining 1 tbsp oil, peppers, celery and tomato. Stir and cook until peppers are tender (about 3 minutes) - reserve.
Add the rice to the skillet, return to the heat and let it fry a little (2 minutes). Add reserved ingredients to skillet and mix well. Adjust salt and pepper to your taste.
Serve immediately, garnished with fresh cilantro, some avocado slices and a dollop of sour cream
