One Pan Zucchini and Egg Skillet

Looking for a quick, easy, delicious and healthy meal? You've found it! This One-Pot Zucchini Egg Skillet - with bacon for extra flavor or without it for a leaner alternative!

How not to love a one pot dinner? Especially on weeknights when you want to eat something delicious but with little effort!

And if you can make it healthy it's even better! Here at home we've been trying to include healthier (and with less calories) recipes on our menu. But that doesn't mean we are giving up on flavor! And the recipe I bring you today is exactly like that: healthy, but very flavorful!

📋 Ingredients

For this recipe you will need:

  • olive oil
  • bacon strips
  • zucchini
  • grape tomatoes (you could use cherry tomatoes or any other you prefer, or have at home)
  • eggs
  • Salt and pepper

This recipe is good for 3 people, so here you can choose if you want 1 egg per person (good if you have a side like a salad), or 2 eggs per person, so the dish is more filling.

⏲️ How long does it take to make this one pan dinner?

In no more than 20 minutes you can have this recipe ready! This is not something that has to cook for a long time. In fact, the low cooking time is what helps to keep that fresh taste!

🍳 How to make it

  1. Heat the oil in a non-stick frying pan, over medium heat then add bacon.
  2. While bacon is frying, wash and cut the zucchini. Cut lengthwise in fourths and then in 3/8 inch (1cm) thick slices.
  3. Increase heat to high, add zucchini to pan, mix well, and fry for 3 to 5 minutes.
  4. While zucchini cooks, wash tomatoes and add them to pan.
  5. Mix well and after 2 minutes add salt and pepper to taste. Mix.
  6. Make 3 (or 6) holes in the mix and crack in the eggs.
  7. Cover the pan with a lid and cook for 2-3 mins until the eggs are done.
  8. Serve right away!

💭 Thoughts and Variations

Wanna make it even healthier and lighter? Use only half the bacon.

And if you are willing to give up on some of the flavor, you can simply leave out the bacon. But I don't think you should do that! After all, we all know that bacon is just irresistible 😉

Add green onions or chives for extra flavor and fresh chopped parsley for extra freshness.
