⏲️ How long does it take to make this one pot dinner?
In no more than 20 minutes you can have this recipe ready! This is not something that has to cook for a long time. In fact, the low cooking time is what helps to keep that fresh taste!
🍳 How to make it
- Heat the oil in a non-stick frying pan, over medium heat then add bacon.
- While bacon is frying, wash and cut the zucchini. Cut lengthwise in fourths and then in 3/8 inch (1cm) thick slices.
- Increase heat to high, add zucchini to pan, mix well, and fry for 3 to 5 minutes.
- While zucchini cooks, wash tomatoes and add them to pan.
- Mix well and after 2 minutes add salt and pepper to taste. Mix.
- Make 3 (or 6) holes in the mix and crack in the eggs.
- Cover the pan with a lid and cook for 2-3 mins until the eggs are done.
- Serve right away!
💭 Thoughts and Variations
Wanna make it even healthier and lighter? Use only half the bacon.
And if you are willing to give up on some of the flavor, you can simply leave out the bacon. But I don't think you should do that! After all, we all know that bacon is just irresistible 😉
Add green onions or chives for extra flavor and fresh chopped parsley for extra freshness.
