Learn how to make this delicious Split Pea Soup. It's the perfect comfort food to keep you warm on cold days!
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 medium carrots, chopped
- 2 celery stalks, chopped
- A pinch dried thyme
- Salt and pepper to taste
- 4 slices bacon, roughly chopped
- 4 cups water
- 4 cups beef stock
- 1lb (450g) dried split peas
- 2 tbsp butter
- 4 slices bread, cut into medium pieces
In a large pan heat olive oil over medium heat. Add onion, carrots, celery and bacon. Season with salt, pepper and thyme. Cook until vegetables start to soften, 6 to 8 minutes.
Add water, beef stock and split peas. Bring to a boil and reduce heat. Let it cook until peas are tender - 30 to 45 minutes (more if needed).
With the back of a spoon, smash some peas so the soup is a little thicker. Add more salt, if needed.
In a frying pan melt butter and add bread. Stir until bread pieces are golden brown, 6 to 8 minutes.
Place croutons on top of soup. Enjoy!
