  • In a large pan, warm the olive oil over medium heat. Add the chopped onion, carrots, celery, and bacon, creating a symphony of flavors and aromas. Season this medley with a pinch of dried thyme, salt, and pepper. Allow the vegetables to soften and infuse with the bacon's smoky richness, a process that takes approximately 6 to 8 minutes.
  • Pour in the water, beef stock, and the star of the show, dried split peas. Split Pea Soup

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 medium carrots chopped
  • 2 celery stalks chopped
  • A pinch dried thyme
  • Salt and pepper to taste
  • 4 slices bacon roughly chopped
  • 4 cups water
  • 4 cups beef stock
  • 1 lb 450g dried split peas

Croutons (optional)

  • 2 tbsp butter
  • 4 slices bread cut into medium pieces

Instructions

  • In a large pan heat olive oil over medium heat. Add onion, carrots, celery and bacon. Season with salt, pepper and thyme. Cook until vegetables start to soften, 6 to 8 minutes.
  • Add water, beef stock and split peas. Bring to a boil and reduce heat. Let it cook until peas are tender - 30 to 45 minutes (more if needed).
  • With the back of a spoon, smash some peas so the soup is a little thicker. Add more salt, if needed.

Croutons

  • In a frying pan melt butter and add bread. Stir until bread pieces are golden brown, 6 to 8 minutes.

Serving

  • Ladle the soup into bowls and top with some croutons (optional). Enjoy!
