- 1 tbsp olive oil
- 1 medium onion chopped
- 3 medium carrots chopped
- 2 celery stalks chopped
- A pinch dried thyme

- 4 slices bacon roughly chopped
- 4 cups water
- 4 cups beef stock
- 1 lb 450g dried split peas

- 2 tbsp butter
- 4 slices bread cut into medium pieces
