This Healthy Eggs Florentine recipe uses our healthy mock hollandaise sauce and it is tasty, it is better for you (there is very little fat) and with much less calories!
We've been making Eggs Benedict forever and I really don't know why we never made Eggs Florentine.
But thankfully one of these days we bought too much spinach for another recipe and ended up using the leftover to make Healthy Eggs Florentine.
What a hit! I have to say we are totally in love with this recipe! It's very easy to make, it's healthy and insanely delicious!
💭 Tips
- For this recipe we used our Homemade Artisan Bread (recipe soon) instead of English Muffins, but you could use either one.
- Make your eggs in a frying pan with some water and a little butter for taste. It will be very flavorful and you'll be adding only a few calories. You can poach them too.

- a slice of artisan bread (or an English muffin if you prefer)
- olive oil
- spinach
- eggs

Healthy Eggs Florentine with Artisan Bread
Ingredients
- 1 slice bread artisan
- 1/4 tsp olive oil
- 1/2 cup spinach cooked
- 1 egg
- 1/2 cup fake hollandaise sauce
Instructions
- Toast the bread to your taste.
- Place 1 tbsp water and 1 tsp butter in a frying pan and let butter melt over mediu heat.
- Add egg/eggs, cover and let them cook to your taste. We like it a little runny.
- Heat spinach (microwave or stovetop)
- Drizzle olive oil on bread, arrange spinach on top, place the egg/eggs and pour fake hollandaise sauce over.
- Serve immediately.
