Healthy Eggs Florentine closeup

We've been making Eggs Benedict forever and I really don't know why we never made Eggs Florentine.

But thankfully one of these days we bought too much spinach for another recipe and ended up using the leftover to make Healthy Eggs Florentine.

What a hit! I have to say we are totally in love with this recipe! It's very easy to make, it's healthy and insanely delicious!

💭 Tips

  • For this recipe we used our Homemade Artisan Bread (recipe soon) instead of English Muffins, but you could use either one.
  • Make your eggs in a frying pan with some water and a little butter for taste. It will be very flavorful and you'll be adding only a few calories. You can poach them too.
