This recipe will give you a Fluffy Lime Coffee Cake that is perfect to brighten up any boring afternoon. It is excellent with some tea and, in these times of social distancing, you can have it just for yourself - and anyone that lives with you, of course!
Here in Brazil we are also following recommendations to get out as little as possible. Since we hardly ever get take out or go out to eat, cooking is not a problem. Cooking and baking have been a way of clearing our minds. It is almost a therapy.
This Fluffy Lime Coffee Cake was rescued from almost forgotten notes. Last week my mom wanted me to grab a coffee cake for her at a bakery. But to avoid leaving home, my husband said he would make her a cake. Since I was going to do her grocery shopping and deliver them to her home, I might as well just carry one more thing.
The options were either a plain, a vanilla or lime coffee cake. In doubt, I chose the latter. I remember this cake being very moist and fluffy, and super easy to make. Plus, I know my mom loves any kind of citrus cake.
Thinking back, I wonder if my husband made the coffee cake so that I would not leave the house, or because he wanted to please his mother-in-law 🙂 Anyway, his intentions were noble and, here it is: a recipe for a fluffy lime coffee cake, with a perfect balance of tangy and sweet, great to brighten a dull afternoon!
📋 Ingredients
To make this delicious coffee cake you will need:
- unsalted butter
- sugar
- egg
- lime zest
- all purpose flour
- baking powder
- salt
- milk (any kind of cow's milk)
🍳 How to make it
Preheat oven to 350F (180C).
Grease a 7 inch (18cm) bundt cake pan or a 9 x 5 inch (23cm X12cm) rectangular cake pan with butter or oil.
Place butter, sugar, egg and lime zest in the bowl of a mixer and beat in medium high speed untill fluffy (2 to 3 minutes).
Stop mixing, add flour, baking powder, salt and milk and start mixing on low speed.
Increase the speed slowly until the batter is smooth.
Transfer the batter to the pan and bake for aproximately 35 minutes (until a toothpick inserted in the cake comes out clean).
Remove it from the oven and let it cool completely before taking the cake out of the pan.
💭 Tips and thoughts
- You can add more lime zest if you like, but I find that the zest of a medium lime works perfectly. You can add less too if you prefer a mild lime taste.
- I do not recommend adding the lime juice to the batter. The cake will be acid and it will collapse when you take it out of the oven - it has happened to me!
- The recipe calls for cow's milk. I have not used any other milk (animal or vegetable), so I can't really tell if a soy or almond milk would cause any kind of problem. I suppose it will change the flavor though.
