We are crazy about salads here at home! And not just the adults. My daughter is now 13 years-old and thankfully she has always been a good eater! And this Chicken Avocado Salad and Honey Mustard Dressing is a favorite among all of us. But what's not to like? As I've said before the chicken is extra juicy and flavorful because of the marinade. The other ingredients (avocado, corn, lettuce and grape tomatoes) are so refreshing, and the dressing is so tasty! Oh, and there's also bacon!
Ingredients you need to make this Chicken Avocado Salad and Honey Mustard Dressing
For this recipe you will need honey, mustard, olive oil, and cider vinegar for the marinade; mayonnaise, mustard, vinegar, and honey for the dressing and chicken breast, bacon, lettuce, tomatoes, avocado and corn for the salad.
Tips to make this recipe
- For the dressing, use more or less honey, according to your taste.
- For the marinade and dressing you can use Dijon or regular mustard.
- Use any lettuce you prefer. You can even add other greens, like arugula.
- Grape tomatoes are my personal favorite, but you could use cherry tomatoes or any other you like (or have at home).
Chicken Avocado Salad and Honey Mustard Dressing
Ingredients
Marinade
- 1 tbsp honey
- 1 tbsp mustard
- 1 tbsp olive oil
- 1.2 tbsp cider vinegar (or white vinegar)
- Salt and pepper to taste
Dressing
- 4 tbsp mayonnaise
- 4 tbsp mustard (Dijon or yellow)
- 2 tbsp white or cider vinegar
- 2 tbsp honey (a little more if you like it sweeter)
- Salt and pepper to taste
Salad
- 10.5 oz chicken breast, cut into 2-3 pieces
- 3 slices bacon
- 1 head lettuce (choose your favorite), washed and torn into medium pieces
- 1 cup grape tomatoes, cut in half
- 2 avocados, pitted and sliced
- 1 can sweet corn
Instructions
Marinade
- Whisk all ingredients together and pour marinade on chicken. Let it marinate for 30 minutes to 1 hour.
Dressing
- In a small dish whisk all ingredients until smooth.
Salad
- In a skillet fry bacon slices until crispy, remove from pan and cut them in small pieces. Set aside.
- In the same skillet heat a little bit of olive oil, grill chicken pieces on both sides until golden, crispy and cooked through.Let chicken cool a little.
- Slice chicken into strips and prepare salad with lettuce, tomato, avocado slices, corn, bacon and chicken.
- Drizzle with honey mustard dressing.
