These Breakfast Potatoes are the perfect side dish for almost any breakfast, but they are also great side with sandwiches, wraps, burgers and more!

Here in Brazil people don't eat potatoes for breakfast. But we do! Not often, but when we feel like having some, we always go for this recipe. Simple and perfect! And as you'll see now there's no secret ingredient or anything. Or maybe that's the secret, keeping it simple 🙂

I'm not giving you the exact quantities on this recipe because you can make as much as you want!

Ingredients

  • potatoes
  • vegetable oil
  • salt and pepper

How to make it

  • Boil potatoes, but don't let them get too soft.
  • Preheat a frying pan with oil. Place the potatoes. You will get a better results if the potatoes are in a single layer. Fry until golden brown.
  • Season with salt and pepper.

Ingredients

Make as much as you want!

  • Potatoes diced
  • Vegetable oil for frying - enough to cover the bottom of the pan
  • Salt and pepper to taste I use rainbow peppercorns from Trader Joe's

Instructions

  • Boil potatoes, but don't let them get too soft.
  • Preheat a frying pan with oil. Place the potatoes. You will get a better results if the potatoes are in a single layer. Fry until golden brown.
  • Season with salt and pepper.
