These Breakfast Potatoes are the perfect side dish for almost any breakfast, but they are also great side with sandwiches, wraps, burgers and more!

Ingredients
Make as much as you want!
Potatoes
diced
Vegetable oil for frying - enough to cover the bottom of the pan
Salt and pepper to taste
I use rainbow peppercorns from Trader Joe's
Instructions
Boil potatoes, but don't let them get too soft.
Preheat a frying pan with oil. Place the potatoes. You will get a better results if the potatoes are in a single layer. Fry until golden brown.
Season with salt and pepper.
