How to Make Broccoli Rice - Broccoli Couscous

I'm in love! 🙂 I would never think I could find a substitute for rice or couscous, but I did!

I know that cauliflower rice is all over and one of these days I was planning to make it but I was too tired to go to the market to get it. But I had broccoli....

I looked for broccoli rice or couscous recipes on the internet and I found "zero". My first thought was that people might have tried and didn't like it. But I was willing to give it a try anyway. I followed the same steps to make cauliflower rice and guess what? It was so delicious! My husband loved it! Our daughter loved it! It was love at first bite, for all of us!

Ingredients to make Broccoli Rice

For this recipe you'll need:

  • broccoli
  • butter - for this recipe I suggest adding 3 tbsp of butter, and the flavor will be amazing, but feel free to reduce as you wish. You can also substitute the butter for olive oil.
  • salt

How to Make Broccoli Couscous

You'll start by cutting the broccoli into medium pieces. Transfer the broccoli to a food processor and work in batches if necessary. Pulse the broccoli until completely broken down into couscous-sized granules. Pull out any unprocessed pieces, transfer broccoli rice to a bowl and re-process the large pieces. In a large skillet, melt butter. Place broccoli and cook for 5 to 10 minutes. Season with salt, to taste.

What if you don't have a food processor?

  • You could chop it. Cut the broccoli florets into small pieces and then chop into smaller grain-sized pieces.
  • You could use a blender. Cut the broccoli into 1-inch florets. Blend the broccoli until small rice-sized pieces are formed. Scrape the sides of the blender cup to process the florets evenly.

      We basically eat with anything that goes well with regular rice. But on the next post I'll bring a recipe that is the perfect match for this broccoli rice! Come back on Monday 🙂

    I've got a bag full of frozen broccoli in the freezer and would love to try this. Would you defrost the broccolI, then blend and cook it? Or cook from frozen, and then blend it?

      That is a good question Steve 🙂
      I always use fresh broccoli but I think you should put it in the food processor still frozen and then follow the recipe.

    An impulse purchase, @ Trader Joe's. of Honey Walnut Shrimp and a package of Riced Broccoli made me look for a way to prep the broccoli.. This recipe is what I am looking for... Simplicity... Butter... Will be a wonderful compliment to the shrimp... Looking forward to tonight's dinner... :O)

    We made some for dinner tonight! I cooked turkey breasts fillets in one pan and the broccoli in another and the entire meal too about 10 minutes! We served with Mr. Yoshida’s sauce (kind of teriyaki like)! Brilliant and so much easier than Beef and Broccoli bowls! Definitely making again!
