This Open Faced Salmon Melt recipe is an excellent alternative to the classic Tuna Melt! It is a great way to use leftover salmon and it makes a fantastic quick meal for a weeknight dinner!
We make this recipe whenever we have leftover baked salmon. So when we bake salmon we always make a little extra to be sure we have enough to make this incredible sandwich!

This is a pretty simple recipe and a fantastic way to use leftovers!
The ingredients you will need to make this Open Faced Salmon Melt recipe are:
- bread
- salmon (leftover cooked or canned)
- mayonnaise
- mozzarella cheese
- parsley (optional)
We only use leftover cooked salmon because canned salmon is hard to find here in Brazil and then we do find it, it is VERY expensive.
🍞 What is the best bread to make an open sandwich
We think that an open sandwich should be made with a bread that will hold the toppings and not get soggy or fold over when picked up.
For this sandwich (and the tuna melt) we usually use a homemade artisan bread, as it has the perfect balance: the crust helps to hold the dense but soft interior.
But as long as you use sliced bread, you can choose your favorite. It can be white, whole wheat, rye... even a bagel or a baguette will work.
If the bread is on the soft side, don't worry. This recipe has a toasting step to help you out!
🍳 How to make it
It's very easy to make an open faced salmon melt.
Preheat oven to 350F (180C), place bread in a baking pan and put it in the oven for around 5 minutes.
Meanwhile place salmon, mayonnaise and parsley in a bowl and mix well.
Remove bread from oven.
Spread salmon mixture on bread, cover with mozzarella and take back to the oven (if it has the broiler setting, even better - turn it on).
Broil for around 5 minutes or until cheese is bubbling.

As you can see, this is a pretty quick recipe. You won't need more than 15 minutes to make this salmon melt recipe!

- 5 oz cooked salmon
- 4 tbsp mayonnaise
- 4 slices mozzarella cheese
- 1 tsp fresh parsley chopped (optional)
Instructions
- Preheat oven to 350F (180C).

- Remove bread from oven. Spread salmon mixture on bread, cover with mozzarella and take back to the oven.
- Broil for around 5 minutes or until cheese is bubbling.
