How to make ice cream without an ice cream maker

The secret to making ice cream without an ice cream maker is to make the ice cream base as airy as possible even before freezing it.

And this is what you make with this recipe.

Is chocolate ice cream gluten-free?

This chocolate ice cream recipe is gluten-free, egg-free and vegetarian (but not vegan).

In fact, most homemade ice cream recipes are gluten-free as the usual base for ice cream is a custard without flour.

Some ice cream recipes require a pudding like base, but those call for cornstarch, that is gluten-free.

📋 Ingredients

To make this Homemade Chocolate Ice Cream Recipe you only need 3 ingredients:

  • sweetened condensed milk
  • cocoa powder
  • heavy cream or whipping cream

🍳 How to make it

To make homemade ice cream without an ice cream maker you need two basic ingredients: heavy cream and sweetened condensed milk. And for this specific recipe you only need another ingredient: cocoa powder

  • Whip heavy cream/whipping cream until stiff peaks form.
  • Mix sweetened condensed milk and cocoa powder (preferably sift the cocoa powder).
  • Gently fold this mixture into whipped cream until well combined.
  • Transfer to a freezable container, cover and freeze for at least 6 hours.

Should I make this recipe ahead?

Yes, you should. In order for it to have the right consistency you will have to freeze this chocolate ice cream for at least 6 hours.

Tips and variations

  • We used a loaf pan to freeze the ice cream. To avoid it getting a metallic taste, we lined the whole pan with plastic wrap, leaving extra on the sides to cover the ice cream as well (as you can see in the pictures).
  • If you want, you can add chocolate chips, chocolate shavings, diced pecans, walnuts (oh my) while mixing the chocolate mixture to the heavy cream.
  • You can even substitute the cocoa powder for vanilla ou instant coffee (not in the amounts of this recipe) for easy vanilla or coffee ice cream.
