This Crab and Broccoli Risotto is the perfect combination of a classic Italian dish with bold Asian flavors. You will be surprised by the result!

When my husband said he was going to make this Crab and Broccoli Risotto, I didn't expect much from it. But oh my, what a surprise!

There are so many good things to say about this risotto! First, the combination is amazing! Second, it's very easy to make (one of my favorite things 🙂 ) And third, it's so different from what we are used to! I could say it's the perfect combination of a classic Italian dish with bold Asian flavors!

🤔 How to make risotto

Well, risotto is not hard to make. The secret to a good risotto is to stir and add the liquid little by little. The constant stirring removes the starch from the grain and thickens the broth, giving the risotto its creamy signature.

🌾 What kind of rice is used to make risotto

A good risotto also depends on the type of rice you use. We use arborio or carnaroli rice. They are a short-to-medium and "chubby" grain.

If you want a creamy risotto, avoid long grain rice, because they have a low starch content. But if that's the one you have, it is ok to use too. Just remember, your risotto will be less creamy and a little drier!

🦀 What kind of crab meat is used in this risotto?

We used imitation crab meat sticks because it is very hard to find crab meat here in Brazil if you don't live near the coast. Not even canned! Sometimes we find frozen, but it is not cheap!

But your first option would be fresh, second frozen, then canned and even if imitation crab meat is what you can get, as your last option, let me tell you, it's still pretty good!

📋 Ingredients

To make this risotto you will need:

  • olive oil
  • onion
  • garlic
  • fresh ginger
  • turmeric
  • fish sauce
  • risotto rice
  • dry white wine
  • vegetable stock
  • crab meat (the best option is to use fresh crab meat - or frozen - but you can use canned or even imitation crab)
  • broccoli
  • butter (optional)

🍳 How to make it

  1. In a large pan heat olive oil.
  2. Add onion, garlic and ginger and cook for 2 to 3 minutes.
  3. Add turmeric and fish sauce.
  4. Add rice, 1/2 crab meat, wine and 1/2 cup of vegetable stock.
  5. Stir constantly.
  6. Little by little add the remaining vegetable stock (1/2 cup at a time) and keep on stirring.
  7. Keep on adding the stock until rice is "al dente".
  8. If you use all stock and rice is not done, add hot water.
  9. When rice is done, add the remaining crab meat and broccoli.
  10. If you prefer the risotto a little creamier add butter and stir it very well.

Ingredients

  • 2 tbsp olive oil
  • 1/2 onion diced
  • 1 garlic clove minced
  • 1 tsp fresh ginger grated
  • 1/4 tsp turmeric
  • 1 tsp fish sauce
  • 1 cup risotto rice
  • 1/4 cup dry white wine
  • 3-4 cups vegetable stock
  • 6 oz crab meat* cut into small pieces
  • 1 cup broccoli roughly chopped
  • 1 tbsp butter optional

Instructions

  • In a large pan heat olive oil over medium heat.
  • Add onion, garlic and ginger and cook for 2 to 3 minutes.
  • Add turmeric and fish sauce.
  • Add rice, half of crab meat, wine and 1/2 cup of vegetable stock. Stir constantly.
  • Little by little add the remaining vegetable stock (1/2 cup at a time) and keep on stirring.
  • Keep on adding the stock until rice is "al dente". If you use all stock and rice is not done, add hot water.
  • When rice is done, add the remaining crab meat and broccoli.
  • If you want the risotto a little creamier add butter and stir a little more.

Notes

*the best option is to use fresh (or frozen) crab meat but you can use canned or even imitation crab.
