This is the perfect chocolate ice cream recipe! And the secret to perfection is to make a very creamy base, resembling a creamy hot chocolate. Chocolate Ice Cream Recipe The combination of cocoa powder and chocolate make this ice cream very smooth and sweet, but not too sweet, just perfect! Am I saying perfect too many times? 🙂

🌾 Is chocolate ice cream gluten-free?

This chocolate ice cream recipe is gluten-free, egg-free and vegetarian (but not vegan). In fact, most homemade ice cream recipes are gluten-free as the usual base for ice cream is a custard without flour. Some ice cream recipes require a pudding like base, like this one, that calls for cornstarch, is gluten-free.

⏲️ Should I make this recipe ahead?

Yes, you should. In order for it to have the right consistency you will have to freeze this chocolate ice cream for at least 6 hours.

📋 Ingredients

  • milk
  • sugar
  • cornstarch
  • cocoa powder
  • semi sweet chocolate
  • heavy cream

🍳 Instructions

  • combine milk, sugar, cornstarch and cocoa powder in a saucepan over medium heat.
  • stir until mixture starts to thicken.
  • remove from heat, add chocolate and keep on string until it's completely melted.
  • add heavy cream and mix well.
  • place pan in a water bath (we fill up the kitchen sink) to cool the mixture down.
  • transfer ice cream mixture to a covered container and leave it in the fridge for about 6 hours.
  • place mixture in the ice cream maker and follow the manufacturer's instructions.

❄️ How to store homemade ice cream

Right after the ice cream is done it will be the consistency of soft serve ice cream and you can have some. But for a firmer consistency transfer the ice cream to a container with lid  and freeze for at least two hours before serving; the longer the ice cream is in the freezer, the harder it will become.

⌛ How long will homemade ice cream keep in the freezer?

Homemade ice creams last less time in the freezer than the ones that are commercially-made, so the sooner you eat, the better. But you can keep this chocolate ice cream in the freezer for about a month and still maintain its quality.

One last tip...

Before scooping, let the container sit at room temperature for about 5 minutes. The ice cream will become softer and easier to be scooped.
