This Chicken Chili is a great alternative for the classic Beef Chili!
My daughter is madly in love with Chili so she keeps asking me to make it. That's why I'm always trying to make changes to the original recipe so we (the adults) dont get tired of it 🙂 And a Chicken Chili is a great alternative to the traditional recipe!
You will see on the recipe that sour cream, cilantro and cheese are optional for serving, but I highly recommend using them. Personally I need - really need, it's not optional 🙂 - sour cream and fresh cilantro! And if you want to make your own sour cream, check the recipe here.

Chicken Chili
This Chicken Chili is a great alternative for the classic Beef Chili!
Ingredients:
- 1lb (450g) chicken breast, shredded
- 1 medium onion, chopped
- 1 tsp olive oil
- 1/2 cup celery, diced
- 1 large carrot, diced
- 1 can (about 15.5oz/440g) kidney beans
- 2 small (1 large) can diced tomatoes
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp garlic powder
- 1 tsp cumin
- 1/4 tsp black pepper
- 1 tsp sugar (if needed)
For serving: Sour cream (optional), Fresh cilantro (optional), Shredded cheese (optional)
Instructions:
- In a large pan heat the olive oil and fry the onion and chicken.
- Add the remaining ingredients, cover the pan and let it and simmer for 20 to 30 minutes, stirring every 10 to 15 minutes. Check if you would like more salt and spices. Add more if needed.
- Place chili in individual bowls and garnish with sour cream, cilantro and/or cheese (all optional).
