🤔 What is this dish like?

This Brazilian Creamy Chicken with Potato Sticks is called by different names here in Brazil: Frango Delícia, Delícia de Frango (both could be translated to Delicious Chicken), Frango Escabelado (Uncombed Chicken) and so on. But regardless of its name, it is a delicious recipe that I'm sure you'll love it!

But what is exactly this recipe? This dish is made by 3 layers: the bottom layer is made of chicken, the second layer is made with a white sauce and the third layer is potato sticks.

Since both bottom layers are very creamy - they have requeijão (a kind of cream cheese) or cheese, the potato sticks add crispness to the dish. Then it goes in the oven for a few minutes, so the topping gets even crispier.

📋 Ingredients

For the chicken you'll need:

  • olive oil
  • chicken breast
  • tomato paste
  • cream cheese
  • worcestershire sauce

For the white sauce you'll use:

  • butter
  • all purpose flor
  • milk
  • salt and pepper
  • cream cheese
  • mozzarella

And for the crispy topping you will need:

  • potato sticks

🍳 How to make it

You will start with the chicken.

  1. In a saucepan heat olive oil.
  2. Add shredded chicken breast, worcestershire sauce and tomato paste.
  3. Season with salt and pepper to taste.
  4. Add cream cheese and remove from heat.

For the white sauce

  1. In another pan melt butter.
  2. Add flour, cook for 1 minute.
  3. Little by little add milk.
  4. Season with salt and pepper to taste.
  5. Add cream cheese.
  6. Remove from heat and add mozzarella.

Assembling

  1. While you are preparing the chicken and white sauce, preheat the oven.
  2. Spread chicken in a baking dish.
  3. Spread the white sauce over the chicken.
  4. Cover sauce with potato sticks.
  5. Place baking dish in the oven for around 15 minutes.

🍲 What to serve this with

You could eat this creamy chicken by itself but you can also serve it with rice. A nice green salad with a simple dressing (olive oil, vinegar and salt) algo goes well with it.

💭 Variations

You can add some chopped parsley and green onions to the chicken.

You can substitute chicken for turkey.

If you can't find potato sticks, use crumbled regular flavored potato chips.

⏱️ Can I make ahead?

Yes, you can make this ahead. Even being a fairly easy recipe, it is great if you want to have it ready in advance.

❄️ How to store and freeze

Prepare chicken and sauce and then put them in the baking dish. Cover with plastic wrap (make sure the plastic wrap touches the sauce, so it doesn't form a skin) and refrigerate (or freeze) after cooled - without the potato sticks!

You can then reheat it in the microwave then add potato sticks and finish the dish in the oven for extra crispness.

Leftovers can be stored in the fridge and reheated in the microwave/oven. To make sure you get the best of this dish even when reheating it, add an extra half cup of potato sticks just before placing it in the oven to reheat.

Chicken

White sauce

  • 1 tbsp butter
  • 1 tbsp all purpose flour
  • 1 cup milk
  • salt and pepper to taste
  • 1/4 cup cream cheese
  • 1 cup mozzarella grated

Topping

  • 1 cup potato sticks

Instructions

Chicken

  • In a saucepan heat olive oil.
  • Add shredded chicken breast, worcestershire sauce and tomato paste.
  • Season with salt and pepper to taste.
  • Add cream cheese and remove from heat.

White sauce

  • In another pan melt butter.
  • Add flour and cook for 1 minute.
  • Little by little add milk, keep stirring until it boils.
  • Season with salt and pepper to taste.
  • Add cream cheese.
  • Remove from heat and add mozzarella.

Assemble

  • Preheat oven to 350F (180C).
  • Spread chicken in a baking dish.
  • Spread the white sauce on top of chicken.
  • Cover sauce with potato sticks.
  • Place baking dish in the oven for around 15 minutes.
  • Serve with rice.
