This Brazilian Cold Coconut Cake is super moist and just irresistible. It's perfect for many occasions - specially during summer! You'll love it!

We used to eat this Brazilian Coconut Cake every year in my nephew's birthday party, but then he got older and his parties changed to pizza with friends, so that meant no more cold coconut cakes 🙁

But when I made it at home my daughter fell in love with it! So, for this reason, I started to make it more often. And I know why she loved it: it's amazingly delicious!

The combination of coconut and sweetened condensed milk is simply perfect! And having it chilled makes it even better!

Another Brazilian recipe with sweetened condensed milk and coconut are the Beijinhos - sweetened condensed milk and coconut truffles.

It's the Brazilian version of a Tres Leches Cake. Here it is also called "Fluffy Towel Cake" because it looks like a really fluffy towel! 😉

Brazilian Cold Coconut Cake

📋 Ingredients

To make this cold coconut cake you'll need:

  • sugar
  • all-purpose flour
  • eggs
  • milk
  • shredded coconut
  • baking powder
  • butter.
  • sweetened condensed milk
  • coconut milk

🍳 How to make it

It couldn't get any easier.

To make the cake:

  • Mix all ingredients for the cake together using a whisk.
  • Pour batter it in the pan.
  • Bake for around 20 minutes and let it cool - do not remove from pan.

To make the coconut coating :

  • Mix sweetened condensed milk and coconut milk in a bowl.

To assemble the cake:

  • Pierce the cake with a fork several times.
  • Drizzle the coconut and condensed milk mixture on top of the cake.
  • Sprinkle the shredded coconut on top.

🍰 How to serve

First things first, you must serve it cold, so keep it in the fridge.

You can make individual servings by cutting the cake (after finished) into medium squares/rectangles and then wrap each piece in aluminum foil (see picture below). You can keep the individual cakes in the fridge for a few days, but you can also freeze them and defrost before serving.

To defrost, just leave it at room temperature for 5 to 10 minutes before serving.

This individual wrapping is very convenient for a picnic or if you wanna have something sweet waiting for you in the freezer 🙂

Cold Coconut Cake

Ingredients

For the cake

  • 1 cup sugar
  • 2 cups all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 2 tbsp shredded coconut
  • 1 tbsp baking powder
  • 2 tbsp unsalted butter

For the coconut coating

  • 14 oz sweetened condensed milk
  • 8 oz coconut milk
  • 1 cup shredded coconut
US Customary - Metric

Instructions

  • Grease a 9in X 13in (23cm X 33cm) cake pan (if you have one a bit smaller, that's fine).
  • Using a whisk, mix all ingredients together and then pour it in the pan.
  • Bake for around 20 minutes or until a toothpick inserted in center of cake comes out clean. Let cake cool.
  • In a small bowl pour the sweetened condensed milk and coconut milk. Mix well.
  • Remove cake from pan and pierce the surface with a fork several times.
  • Slowly drizzle the cococnut milk/condensed milk mixture on top of the cake.
  • Sprinkle the shredded coconut on top of the cake.
  • Serve cold.

Notes

You could also cut the cake into medium squares/rectangles. Cut foil into squares large enough to wrap cake pieces and then wrap each piece individually in foil (see pictures below). You can keep the individual cakes in the fridge for a few days, but you can also freeze them and defrost for 5 to 10 minutes before eating.

    Absolutely Delicious and Easy to Make

    The sweeten condensed milk and coconut milk does take awhile to absorb into the cake, so try not to be alarmed thinking it is not working. Tastes great with ice cream. I tried it with a homemade tropical gelato too and it was divine.
