Huevos Rancheros: this is probably one of the best recipes you'll ever find! And they are perfect for breakfast, brunch and, why not, dinner!
We just love Breakfast for Dinner! Don't you? And I think that Huevos Rancheros are simply perfect for dinner time! But don't get me wrong, they are also amazing for breakfast and brunch 🙂
We didn't have our own recipe so we checked many before we came up with our own. Here is our version of what we think are the perfect Huevos Rancheros!
Ingredients
To make this Huevos Rancheros recipe you'll need:
- eggs
- flour tortillas
- mozzarella cheese
- chives
- Tabasco sauce
If you are making your own salsa from scratch you'll need:
- onion
- garlic
- vegetable oil
- bay leaf
- canned tomatoes
- chili powder
- salt
- black pepper
For the beans:
- beans
- vegetable oil
- chives
- cumin seeds (or cumin powder)
How to make it
If you are making your own salsa, start with it:
- In a large skillet heat oil, add onion and garlic, cook until onion is translucent, about 5 minutes. Add tomatoes and remaining ingredients, mix well and let sauce simmer for around 15 minutes.
To make the beans:
- In another skillet, heat oil and add beans, chives and cumin seeds.
For the eggs:
- With a spoon make 3 holes in the salsa, break the eggs, one at a time and place them carefully in the holes. Cover with a lid and let them cook for 3 minutes.
Assembling:
- Warm the tortillas and place each one on a plate.
- Start by spreading the beans, equally in each tortilla, add salsa and one egg in each tortilla, add cheese, chives and sour cream.
- Add tabasco sauce, if using.
I just have one word to describe it: Divine!

Believe it or not, I am of Mexican descent, live in the land of Tex-Mex food, and on the US-Mexican border & I have never eaten or made huevos rancheros!
