Ingredients
1tbspolive oil
1medium onionchopped
3medium carrotschopped
2celery stalkschopped
A pinch dried thyme
Salt and pepper to taste
4slicesbaconroughly chopped
4cupswater
4cupsbeef stock
1lb450g dried split peas
Croutons (optional)
2tbspbutter
4slicesbreadcut into medium pieces
Instructions
In a large pan heat olive oil over medium heat. Add onion, carrots, celery and bacon. Season with salt, pepper and thyme. Cook until vegetables start to soften, 6 to 8 minutes.
Add water, beef stock and split peas. Bring to a boil and reduce heat. Let it cook until peas are tender - 30 to 45 minutes (more if needed).
With the back of a spoon, smash some peas so the soup is a little thicker. Add more salt, if needed.
Croutons
In a frying pan melt butter and add bread. Stir until bread pieces are golden brown, 6 to 8 minutes.
Serving
Ladle the soup into bowls and top with some croutons (optional). Enjoy!
