These quinoa meatballs are meatless, very tender and extremely tasty. They are fantastic with hummus, cucumber/tomato relish and pita style bread. Super healthy and great for a meat free meal!

1/2onionminced

1 ½ tspsalt
¼tspground black pepper
¼tspcoriander powder
½tspsmoked paprika
3tbsppankoor breadcrumbs
3cupscooked quinoa
3tbspvegetable oil
Instructions
In a small frying pan, heat the olive oil and sauté half the onion and garlic. Place them in a big bowl.
Add remaining onion and garlic and all other ingredients, and mix well.
Grease your hands and shape the meatballs. We used a tablespoon to measure the amount of the mixture we would use. Set them aside on a lightly greased plate.
Preheat a large skillet with one tbsp of vegetable oil and place 1/3 of the meatballs to fry. Turn them carefully and remove them when golden brown. Repeat with remaining meatballs.
