Ingredients
11oz(300g)pasta(fusilli, penne or any other you like)
1tbsp olive oil
1medium onionchopped
1clovegarlic minced
1stick celerychopped (optional, but recommended)
1medium carrotchopped (optional, but recommended)
1can 28oz (800g) tomatoes
Salt and pepper to taste
1tsp sugar if needed
Grated Parmesan cheesefor serving
Instructions
In a medium pan heat the olive oil. Add onion, garlic, celery and carrot. Cook for 3 to 5 minutes and add tomatoes. Put some salt and pepper and bring to a boil. If sauce is a little acid, add the sugar. Let sauce simmer for around 15 minutes, stiring from time to time.
When sauce is simmering get a large pot and heat water for the pasta. Add some oil and salt and cook according to package instructions.
Divide pasta in 4 plates and pour sauce on top of pasta. Sprinkle Parmesan cheese and serve.
