Ingredients
3eggs
3large flour tortillas
1cupsour cream
1cupmozzarella cheesegrated
1tbspchiveschopped
Tabasco sauceto taste
For the salsa
1onionfinely sliced
2garlic clovesminced
1tbspvegetable oil
1bay leaf
214oz/400g each cans tomatoes
1tspchili powder
1tspsalt
1/4tspground black pepper

For the beans
1tbspvegetable oil
1cupbeanscooked and drained
1tbspchiveschopped
1tspcumin seedsif you use cumin powder, use just 1/2 tsp
Instructions
For the salsa
In a large skillet heat oil, add onion and garlic. Cook until onion is translucent, about 5 minutes.
Add tomatoes and remaining ingredients. Mix well and let sauce simmer for around 15 minutes.
For the beans
In another skillet, heat oil and add beans, chives and cumin seeds.
For the eggs
With a spoon make 3 holes in the salsa. Break the eggs, one at a time and place them carefully in the holes. Cover with a lid and let them cook for 3 minutes.
Assembling
Warm the tortillas and place each one on a plate.
Start by spreading the beans, equally in each tortilla. Add salsa and one egg in each tortilla.
