Instructions
Heat the oil in a non-stick frying pan, over medium heat then add bacon.
While bacon is frying, wash and cut the zucchini. Cut lengthwise in fourths and then in 3/8 inch (1cm) thick slices.
Increase heat to high, add zucchini to pan, mix well, and fry for 3 to 5 minutes.
While zucchini cooks, wash tomatoes and add them to pan.
Mix well and after 2 minutes add salt and pepper to taste. Mix.
Make 3 (or 6) holes in the mix and crack in the eggs.
Cover the pan with a lid and cook for 2-3 mins until the eggs are done.
Serve right away.
