A delicious Salmon Melt is a great way to use leftover baked salmon and makes a fantastic quick meal

slices
bread
artisan or any other of your preference (if slices are small you could use 4)

cooked salmon

tbsp
mayonnaise

slices
mozzarella cheese
1
tsp
fresh parsley
chopped (optional)
Instructions
Preheat oven to 350F (180C).
Place bread in a baking pan and put it in the oven for around 5 minutes.
Meanwhile place slamon, mayonnaise and fresh parsley (if using) in a bowl. Mix well.
Remove bread from oven. Spread salmon mixture on bread, cover with mozzarella and take back to the oven.
Broil for around 5 minutes or until cheese is bubbling.
