Fluffy Lime Coffee Cake
A recipe for a fluffy lime coffee cake, with a perfect balance of tangy and sweet, great to brighten a dull afternoon.

Ingredients

unsalted butter
softened

sugar

any kind of cow's milk
Instructions
Grease a 7 inch (18cm) bundt cake pan or a 9 x 5 inch (23cm X12cm) rectangular cake pan with butter or oil.
Preheat oven to 350F - 180C.
Place butter, sugar, egg and lime zest in the bowl of a mixer and beat in medium high speed untill fluffy (2 to 3 minutes).
Stop mixing, add flour, baking powder, salt and milk and start mixing on low speed, increasing the speed untill the batter is smooth.
Transfer the batter to the pan and bake for aproximately 35 minutes (until a toothpick inserted in the cake comes out clean).
Remove it from the oven and let it cool completely before taking the cake out of the pan.
Notes
You can add more lime zest if you like. I find that the zest of a medium lime works perfectly. You can add less too if you prefer a mild lime taste.
I do not recommend adding the lime juice to the batter. I've done it and the cake fell after taking it out of the oven.
