Ingredients
Marinade
1tbsphoney
1tbspmustard
1tbspolive oil
1.2tbspcider vinegar (or white vinegar)
Salt and pepper to taste
Dressing
4tbspmayonnaise
4tbspmustard (Dijon or yellow)
2tbspwhite or cider vinegar
2tbsphoney (a little more if you like it sweeter)
Salt and pepper to taste
Salad
10.5ozchicken breast, cut into 2-3 pieces
3slicesbacon
1headlettuce (choose your favorite), washed and torn into medium pieces
1cupgrape tomatoes, cut in half
2avocados, pitted and sliced
1cansweet corn
Instructions
Marinade
Whisk all ingredients together and pour marinade on chicken. Let it marinate for 30 minutes to 1 hour.
Dressing
In a small dish whisk all ingredients until smooth.
Salad
In a skillet fry bacon slices until crispy, remove from pan and cut them in small pieces. Set aside.
In the same skillet heat a little bit of olive oil, grill chicken pieces on both sides until golden, crispy and cooked through.Let chicken cool a little.
Slice chicken into strips and prepare salad with lettuce, tomato, avocado slices, corn, bacon and chicken.
