How to make this Split Pea Soup Recipe?
- In a large pan, warm the olive oil over medium heat. Add the chopped onion, carrots, celery, and bacon, creating a symphony of flavors and aromas. Season this medley with a pinch of dried thyme, salt, and pepper. Allow the vegetables to soften and infuse with the bacon's smoky richness, a process that takes approximately 6 to 8 minutes.
- Pour in the water, beef stock, and the star of the show, dried split peas. As you bring the mixture to a gentle boil, the kitchen fills with an irresistible scent that promises a heartwarming meal. Reduce the heat and let the soup simmer until the peas turn tender, which typically takes between 30 to 45 minutes (adjust as needed).
- To give the soup a satisfying thickness, use the back of a spoon to gently smash some of the peas. This step enhances the soup's texture. Taste and add more salt if desired.
