Looking for a quick, easy, delicious and healthy meal? You’ve found it!
Here at home we’ve been trying to include healthier (and with less calories) recipes on our menu. But that doesn’t mean we are giving up on flavor! And the recipe I bring you today is exactly like that: healthy, but so flavorful!
- 1 tsp olive oil
- 2 strips of bacon, roughly sliced
- 1 lb (450g) zucchini, sliced and quartered
- 7 oz (200 g) grape tomatoes
- 3 eggs
- Salt and pepper to taste
- Heat the oil in a non-stick frying pan, then add bacon. Fry for 2-3 mins, and add the zucchini. Fry for 5 more minutes and add the tomatoes. Cook for a few more minutes. Add salt and pepper, to taste. Make 3 holes in the mix and crack in the eggs. Cover the pan with a lid and cook for 2-3 mins until the eggs are done.
Wanna make it even healthier and lighter? Cut half the bacon. And if you are willing to give up on some of the flavor, you can simply remove the bacon. But I don’t think you should do that 🙂
